Turkish Bulgur Pilavi

 Bulgur Pilavı is a traditional Turkish dish made from bulgur and tomatoes. It's packet full of flavor and is nutritious too. It’s a staple dish in many Turkish households. Easy to make, easy to pair, and works as a wonderful side dish.

Ingredients: 

  • Bulgur wheat 
  • Onions 
  • Tomatoes 
  • Olive oil 
  • Water or vegetable stock 
  • Bell peppers 
  • Garlic 
  • Tomato paste 
  • Sweet pepper paste 
  • Spices
Heat two tablespoons olive oil.
One teaspoon butter (or use just olive oil to make it vegan. Stir until butter melts.
One medium sized onion finely chopped.
Sauté for a few seconds. 
One teaspoon salt (or to taste)
Sauté for one to two minutes on medium flame. 
2 large garlic cloves (finely chopped). Sauté for a minute.
One small capsicum (Bell paper) finely chopped. Stir well.
Half a green Turkish paper (or green Chilli if you prefer it spicy)
I heaped TBS tomato puree. Mix well until the ingredients combine.
2 medium sized tomatoes (grated) mix well.
(1/2 tsp black paper powder, 1/2 tsp red paper flakes, one tsp dried mint, one tsp dried thyme) mix well for about 1 minute to cook the spices. 
Freshly squeezed lemon juice to taste.
Here we are using coarse Bulgur wheat. It almost resemble short grain rice and is perfect for pilaf.
One and half cup coarse Bulgur wheat. Mix well into the tomato and spice mixture. 
Three cups hot water (double quantity of Bulgur). Mix well and bring to a boil. Cover and cook on low flame until water has been absorbed. It takes about 15 minutes for the water to absorb. 
Cover with a damb tea cloth and let
 rest for 7 or 10 minutes.
After served by small bowl to Mound into shape.
